VARIETAL COMPOSITION: Assyrtiko, Roditis, and Sauvignon Blanc
VINEYARD: Assyrtiko, Roditis, and Sauvignon Blanc from the organic vineyards of Ktima Matsa in Kantza, Attica. The climate is dry and Mediterranean, and a significant portion of the vines are over 35 years old.
VINIFICATION: Selective hand harvesting and strict sorting in the vineyard. Assyrtiko and Roditis are transferred to the destemmer and then to the press, where only the free-run juice is kept. Static clarification at 12°C is followed by alcoholic fermentation in stainless steel tanks at 16°C.
Sauvignon Blanc undergoes brief pre-fermentation cold maceration for 6-8 hours at 8°C, followed by alcoholic fermentation in stainless steel tanks at 16°C. Each variety is vinified separately, and the final blend is created after the completion of alcoholic fermentation. The wine is aged on fine lees for 6 months with gentle stirring (batonnage).
TASTING NOTES: Lemon color with green highlights. The nose is dominated by citrus aromas, lemon zest, and pear with subtle herbal characteristics. Medium-bodied with refreshing acidity and a pleasant finish.
